Olive fruits crushed into a mash by the millstone are taken into coconut-fiber bags and placed one on top of the other under the press. Water is added to the bags to start the pressing process. This method is called “water press”. Water added to the bags should never exceed 28°C. This allows the vitamin-E, nutrients and aromatic flavors of the oil to be preserved. Oil obtained by this method is not filtered. This oil is ideal especially for cooked food.
